Mexican oregano is more pungent than standard oregano, but any variety will work in a pinch.<\/li>\n\n\n\n<li><strong>sliced jalapeno peppers<\/strong>&nbsp;&ndash; around \u00bc inch thick<\/li>\n\n\n\n<li><strong>carrots<\/strong>&nbsp;&ndash; peel them first.&nbsp;<\/li>\n\n\n\n<li><strong>granulated sugar<\/strong><\/li>\n\n\n\n<li><strong>white vinegar<\/strong>&nbsp;&ndash; some choose to use apple cider vinegar, but white vinegar is best for a neutral taste.<\/li>\n<\/ul>\n\n\n\n<\/div>\n<\/div>\n\n\n<p class=\"has-text-align-center\"><em>For a full list of ingredients and their measurements, <\/em>&#128203;<em> please view my printable recipe card at the bottom of the post.<\/em><\/p>\n\n\n\n<p><strong>Optional Garnish:<\/strong><\/p>\n\n\n\n<p>Pickled jalape&ntilde;os and spicy carrots add so much flavor to any dish and you can toss them on anything that you would normally order at a Mexican restaurant.&nbsp;<\/p>\n\n\n\n<div class=\"substitutes-block\">   \n        <div class=\"wrap\">\n            \n\t\t\t<h2 id=\"substitutions-and-variations\"   class=\"substitute-title\">Substitutions and Variations<\/h2>\n\n\n<ul class=\"wp-block-list\">\n<li><strong>Pickled jalape&ntilde;os<\/strong>&nbsp;&ndash; if desired, you can omit the carrots and just use the peppers.&nbsp;<\/li>\n\n\n\n<li><strong>Long-term canning<\/strong>&nbsp;&ndash; if you want to pickle the peppers and carrots where they are shelf stable or make a really big batch, you will need to go through the full canning process. Wash the jars, lids, and rings with soap and water, then dry. Place the jars in a boiling hot water bath over high heat for 10 minutes to sterilize. Follow the recipe instructions that are listed, but don&rsquo;t fill the jars completely full, leave a little room at the top. Clean the rim of the jar with a paper towel and secure the lid. Place them in another boiling water bath for 15 minutes.
